I’ve made many wraps in my life but never thought to just heat the whole thing up. Now I’m hooked. This wrap is toasty outside with warm raw, crunchy veggies inside – brilliant! This easy to make, extremely yummy and nutritious lunch will get you through the winter months. If you have a toaster oven at work just make the wrap at home and toast it at work for a warm, satisfying hot lunch.
How To Make It:
1) To get started grab your favourite wrap – could be a whole grain wrap or a rice wrap (gluten-free), whichever you prefer.
2) Next spread your favourite hummus around on the wrap – be generous: at least 2 TBSP
3) Now start adding your veggies. Check your fridge and use everything you’ve got. My favourites include: Red Cabbage, Kalamata Olives, Peppers, Spinach and I will often throw in avocado or leftover squash cut into strips
4) Now fold everything together as though you were making a burrito. Then toast in a toaster oven or regular oven for about 10 minutes at 375 degrees. You can use a fancy sandwich press if you have it but the toaster oven works perfectly for me.
