Another one of our soup for hungry cyclists recipes. This one features butternut squash, which is high in beta carotene; and zingy ginger, which aids digestion. As well as being highly nutritious, it’s easy to make and it’s delicious.
Ingredients
1 tbsp olive oil
1 large onion, chopped
1-2 tablespoons fresh ginger, minced
2 small gloves garlic
3 cups chicken or vegetable stock
1 medium butternut squash-baked, seeds removed (bake it the day before)
Optional
1/2 cup cream
2 tbsp chopped parsley
grated orange zest
Put it Together
Heat oil and sauté the onion and for a few minutes
Add the garlic and ginger cook for 1 minute
Add the stock
Taste for salt and add it if necessary
Remove the pulp from the squash and add to the stock, bring to a boil
Reduce the heat and simmer for 15 minutes
Blend the soup with an emersion blender or food processor
If you want a richer soup, add 1/2 cup of cream after blending. If desired, add orange zest and parsley. Serves 4.
