This quick and easy soup has lots of flavour and zest. Serve with a fresh loaf of bread and you’ve got a fast, nutritious meal. (Inspiration: bikeradar.com-serves 4)
Ingredients:
- – 2 tbsp olive oil
– 1 onion (chopped)
– 1 bay leaf
– 1 celery stick (chopped)
– 1/4 tsp red pepper flakes (or to taste)
– 1/4 tsp chili powder
– 1 tsp cumin seeds
– 1 1/2 cups green lentils
– 1tbsp balsamic vinegar
– 1 28 oz. (793 mL) can of diced tomatoes
– salt and pepper
– 4 cups chicken, or vegetable stock
– freshly chopped parsley or cilantro
Instructions:
– Heat oil and sauté the onion and celery for a few minutes.
– Add bay leaf, red pepper flakes, chili powder and cumin seeds and stir for 30 seconds.
– Add the lentils, vinegar, tomatoes, and stock, and bring to boil.
– Simmer for 40-50 minutes, stirring frequently.
– Season and serve with parsley or cilantro
