This bar contains oats, raisins, peanuts and almonds, honey, oil and salt. I estimate each square is between 180-220 cal.
Mix the following in a large bowl:
2 cups organic quick oats
1 cup unsalted organic peanuts: chop fine in a food processor
¾ cup almonds: chop fine in a food processor
1 cup raisins
1 tsp sea salt
Mix the following in a small bowl:
1/3 cup honey: diluted with organic apple juice to ½ cup total
3 tbsp olive oil
2 ½ tbsp maple syrup (optional)
1 ½ tsp vanilla
Mix these ingredients and then add to the dry ingredients and mix well. Preheat oven to 350°. Oil 8×8 square baking dish then press mixture into dish firmly with a potato masher. Bake for 25 minutes. Allow to cool completely. Cut into squares before too hard.
Note: If the squares crumble it means either: they were too warm when you cut them, the peanuts and almonds weren’t chopped fine enough, or the mixture was not pressed firmly enough into the baking dish.










I have been making these bars ever since I first read your recipe and we love them.
I have experimented with several different ingredients and the one we like best is to add 4oz melted chocolate (70% cocoa). We limit ourselves to one bar per day and they are our delicious treat!!

I have made this recipe several times now and simply love it. I do have a hard time getting it to stick together but I don’t really care. It is the best tasting and oh so easy to make. I keep some made all the time and even poor milk over it for a snack. It is very filling so you don’t need much. Thanks so much for this great recipe. I am going to try the coconut oil also.
Have you thought of replacing the olive oil with virgin organic coconut oil? It is utilized as energy much easier than olive (or other vegetable) oil since it is a medium chain fatty acid (as opposed to a long chain fatty acid). You may need to melt it first as it is a solid at room temperature.

Make the peanuts organic or all the goodbess of the other organics are nullified. Peanuts are one of the most heavily-pesticided crops. Just FYI.
